🥣 Ingredients:
2 sweet potatoes
1tbsp oil
1tsp garlic flakes
1tsp ground cumin
1tsp paprika
salt to taste
🥣 Ingredients for chickpea balls:
1 onion
1 garlic clove
1 carrot
220g | 8oz mushrooms
400g | 1 tin chickpea
40g | 1/2 cup oat flour
1tsp ground cumin
1tsp paprika
1tsp ground coriander
salt
25g fresh dill
🧑‍🍳Cooking tips:
❗Feel free to add your favourite herbs and spices to the recipe to get your favourite flavour.
🥣 Method:
Peel and cut 2 sweet potatoes.
Place cut sweet potatoes in a bowl and add 1tbsp oil.
Season with 1tsp garlic flakes, 1tsp ground cumin, 1tsp paprika and salt to taste.
Mix well and set aside.
Heat a little oil in a skillet.
Chop 1 onion.
Chop 1 garlic glove.
Add chopped onion and garlic clove to the skillet and cook on medium heat for about 5 minutes.
Grate 1 carrot.
Finely chop 220g | 8oz mushrooms.
Add grated carrot and chopped mushrooms to the skillet and cook for about 10 minutes.
In a mixing bowl mash with a fork 400g | 1 tin chickpea.
Add cooked vegetables mixture.
Add 40g | 1/2 cup oat flour, 1tsp ground cumin, 1tsp paprika, 1tsp ground coriander, salt.
Chop 25g fresh dill.
Mix until combined and transfer to the fridge for 20 minutes.
Spray baking dish with oil.
Shape the mixture into small balls.
Transfer to a baking dish and add sweet potato slices.
Cover with a foil and bake in the preheated oven at 390F | 180C for 30 minutes.
Serve with salsa sauce, chutney or vegetables gravy.
